Mary Berry’s Coffee Cake

You know when you find a recipe and it’s like bingo, that’s a great recipe? This is one of those recipes. I volunteered to bake something for the Macmillan coffee morning in our office and I wanted to try something new so plumped for trying a coffee cake. A google search revealed this Mary Berry recipe in the Telegraph. Mary, along with Delia and James Martin are names I trust most when it comes to cake and pud recipes, you can always count on them to keep it traditional with no reliance on pimping and trendy little twists.

The only change I made was adding a good pinch of salt as that seemed curiously absent from the ingredients and I always add a pinch of salt to cakes. How many times have we seen Mary or Paul criticise someone on Great British Bake Off for making bland cakes? Maybe the Telegraph salt police decided it wasn’t needed. I contemplated adding walnuts but decided to just stick to the recipe, mainly to keep the cost down. The end result is a great cake, one that I will definitely make again.
